Flag Hill Distillery: RASPBERRY LIQUEUR

Raspberries First: Fresh raspberries are delivered to Flag Hill for use in both our Raspberry Liqueur and also for our Raspberry Fruit Wine. The first step in making our liqueur is to macerate (softening/breaking down the fruit by soaking) the raspberries in a blend of General John Stark Vodka and neutral grain spirits. This will provide the base for the product and allows the alcohol and raspberry to really blend well together.

Pressing Next: After soaking for 6 weeks, the product will be pressed using a bladder press (the same equipment used when pressing the grapes). The press will separate the actual flesh and seeds of the fruit away from the product, leaving only the blended fresh raspberry juice and alcohol. 

Final Touch: Before the beverage can be bottled it will be checked for alcohol and sugar levels and adjusted as needed. Any additional botanicals used for the product (things like orange zest or lemon peel) will be added and then a final filtration is necessary to ensure that everything in the bottle is smooth and clear of any small solid particles (seeds, fruit, peel) that might have sneaked through the press.

RECIPES

French Summer: 3/4 oz Raspberry Liqueur, 3 oz soda water, 1 slice lemon, 1 slice orange. 
Pour liqueur into a wine glass filled with ice, add soda water (sparkling water) and squeeze in the lemon and orange. A refreshingly light drink on a hot summer day. 

Mike's Summer Punch: (Party Batch Mixing) Play around with your own measurements of mixing Raspberry Liqueur, General John Stark Vodka, Pineapple Juice, Cranberry Juice and Gingerale to make a tasty, fun summer punch

Raspberry Truffle: 1 oz Raspberry Liqueur, 1/2 oz almaretto, cream. 
Pour liqueur into an ice-filled glass. Add amaretto, and balance with cream. Shake and serve with a straw and a cherry garnish. Good with desserts.

OTHER USES

  • Over ice cream (try chocolate or vanilla)
  • As a dessert wine - great to pair with deep chocolate desserts.
  • Pour a splash of liqueur into the bottom of your champagne glass before pouring the champagne to add a bit of sweet fruit flavor
  • On the rocks 
  • Try a Raspberry-tini (using General John Stark Vodka of course, don't settle for less)
  • Substitute Raspberry Liqueur in any recipe that calls for Chambord
